Mango Burfee



Mangoes are called ‘ king of fruits” not just for their taste but they have many health benefits to the  mankind too.
This is an Indian Dessert which is widely known among the sweet lovers. Recipe is very simple any one can make it without much efforts.


Health Benefits:
1.Prevents Cancer: 
Research has shown antioxidant compounds in mango fruit have been found to protect against colon, breast, leukemia and prostate cancers.
2.Lowers Cholesterol: 
The high levels of fiber, pectin and vitamin C help to lower serum cholesterol levels, specifically Low-Density Lipoprotein (the bad stuff)
3.  Clears the Skin: 
Can be used both internally and externally for the skin. Mangos clear clogged pores and eliminate pimples. (Read more on page 5.)
4.  Eye Health: 
One cup of sliced mangoes supplies 25 percent of the needed daily value of vitamin A, which promotes good eyesight and prevents night blindness and dry eye.

Mango burfee.. ....

Ingredients-
 Mango pulp- 1 cup
Coconut gratings- 1 cup
Sugar- 3-31/2 cup
 Cardamom pd- 1 tsp
Ghee- 2 tsp . 

METHOD- 

Take all ingredients in a thick bottomed pan or karai.

Add lil ghee and and cook till it thickness.


Mix well and let it cook properly . 






When it starts leaving the side add ghee and cardamom powder.






Grease plate with ghee and add this mixture on it.

Flatten it with rolling pin
Cut burfees with desired shapes.

Strawberry Milkshake

 Strawberries have a long history and have been enjoyed since the Roman times. Its mentioned in ancient Roman literature in reference to its medicinal use. The French began taking the strawberry from the forest to their gardens for harvest in the 1300s. Charles V, France's king from 1364 to 1380, had 1,200 strawberry plants in his royal garden.

 Native to many parts of the world, hundreds of varieties of strawberries exist due to crossbreeding techniques

 These fruits are widely appreciated for their characteristic aroma, bright red color, juicy texture, and sweetness. It is consumed in large quantities, either fresh or in such prepared foods aspreserves, fruit juice, pies, ice creams, milkshakes, and chocolates. Artificial strawberry flavorings and aromas are also widely used in many products like lip gloss, candy, hand sanitizer, perfume, and many others.

Like many other fruits, strawberries make their claim in history as a luxury item enjoyed only by royalty. It has been alleged that newlyweds were entitled to strawberries with soured cream as a wedding breakfast, believing them to be an aphrodisiac.

In addition to being consumed fresh, strawberries can be frozen, made into preserves,[40] as well as dried and used in prepared foods, such as cereal bars.

Health Benfits.

They have been used throughout history in a medicinal context to help with digestive ailments, teeth whitening and skin irritations. Their fiber and fructose content may help regulate blood sugar levels by slowing digestion and the fiber is thought to have a satiating effect. Leaves can be eaten raw, cooked or used to make tea.

Strawberries are an excellent source of vitamins C and K as well as providing a good dose of fibre, folic acid, manganese and potassium. They also contain significant amounts of phytonutrients and flavanoids which makes strawberries bright red. 

The vibrant red colour of strawberries is due to large amounts of anthocyanidin, which also means they contain powerful antioxidants and are thought to protect against inflammation, cancer and heart disease.



 Strawberry MilkShake
It’s a refreshing healthy drink and helps to recharge your energy levels. You can enjoy strawberry milkshakes on a warm summer's day or during any time. The best part is, it only takes a few minutes to make the perfect strawberry milkshake. If you want to know how to make strawberry milkshake, then come with me.. It’s very simple n easy.
Ingredients
Strawberries- 250 gm
Milk- 2 -3 cups.
Sugar- 2-3 tsp. (Option)
Venilla Ice cream- 2-3 scoops. (Option)

Method-
First rinse the strawberries and then drain them.
Slice off the green leafy part from all the strawberries and then chop them.
Add the chopped strawberries to a blender jar ALONG WITH MILK.
if the strawberries are very sweet, then you don’t need to add any sugar. If you want still sweeter then add 3 tbsp. sugar.
Blend the milkshake till smooth.
Pour in tall glasses and serve strawberry milkshake immediately.

 You can serve the milkshake plain or add a scoop of vanilla ice cream or strawberry ice cream and have a strawberry ice cream shake.

IDLIS.



IDLI + Sambar + CHATENY... 


Idlis are my favorite SOUTH Indian veg cuisine.  
A low fat, gluten free, soft n light steamed idlis are the best for breakfast or brunch. Being fermented they are good, healthy & nutritious food.
Instead of parboiled rice, I’m using readymade idli rava (cream of rice) to make idlis. along with urad dal. They are pretty soft n light idlis.
The process of making idlis is the same.
It’s easy to get fermented dough in summers.. In winters u know what all circus we do to make soft n light Idli or Dosa? Hahaha. Just have a look..


Health benefits-

Each idli contains just 39 calories, which is a minimal amount in comparison to a healthy 2,000-calorie daily diet. Idlis contain no fat, no saturated fat and no cholesterol. 
In a single idli, you consume 2 grams of protein, 2 grams of dietary fiber and 8 grams of carbohydrates. 
One idli contains 1 milligram of iron, and trace amounts of calcium, folate, potassium and vitamin A. The iron is mostly from the black lentils, with about 25 percent of it from the rice. Iron keeps your blood oxygenated and is crucial for any diet. Men need 8 milligrams daily and women 18 milligrams.

INGREDIENTS (measuring cup used, 1 cup = 250 ml)
·         2 cups idli rava - cream of rice
·         ½ cup urad dal/ black lentils .
·         ¼ tsp  methi seeds/fenugreek seeds
·         water for soaking.


METHOD-
1. Soak oak the urad dal, methi seeds/fenugreek seeds and together for 4-5 hours.
2. Soak the idli rava in a separate bowl or pan for 4-5 hours.
3. Drain the water from the urad dal and keep the water aside. Now drain water from the idli rava as it absorbs a lot of water, so drain them well. 
4. Now in a wet grinder, add all the ingredients and add some of the urad dal strained water.
5. Grind to a smooth paste. Add more water if required.
6. Take the batter in a bowl and mix salt in it.
7. Cover and allow the idli batter to ferment for 7-8 hours. the fermented batter the next day.
8.Take an idli stand grease  some oil in all the moulds, n then  pour the batter in the moulds.
9.Steam the idlis in a pan or in a steamer for 10-12 minutes.  keep the idli stand and cover the pan. Steaming hot idlis are ready.
serve soft idlis with coconut chutney, veg sambar or dry  chutney pudi.
