Khajur Kheer..



Today is Maha Shivratri. 

A festival which celebrates the convergence of Shiva and Shakti. It is celebrated on the Krishna Paksha Chaturdashi of Hindu calendar month Maagha.

There are many legends associated with Shivratri title ' Maha Shivratri, which includes - Marriage of Shiva and Shakti, Samudra Manthan,  Appearance of Shiva on Earth in form of Lingam and Ganga's descent from the heavens to the earth.
 
Mahashivaratri also marks the night when Lord Shiva performed the 'Tandava' the cosmic dance.
 
On this auspicious occasion, Devotees keep fast to please Lord Shiva and seek his blessing. 

Today I’m also keeping fast. As Dates are great energy boosters I’m going to make some delicious dessert with them.  As they contain natural sugars like glucose, sucrose and fructose. To get more advantage add milk and Jaggry to dates  & make it a very nutritious Kheer. 
Dates are very low in calories and are extremely suitable for health conscious people.
Dates can provide lot of health benefits. Dates are high in iron content and fluorine. Dates are rich source of vitamins and minerals.  Consuming dates regularly can help to lower cholesterol and keep many health disorders away. 

Dates are rich in potassium and reduced in sodium. This helps regulate a healthy nervous system.

Dates have high iron content and are very useful in treating anemia. The patients can eat many dates for better advantages. Dates also have fluorine that slows down the process of tooth decay.


Dates help in weight gain and are beneficial for those who suffer from over slimming problem. Dates are excellent for alcoholic intoxication.

Cures abdominal cancer. The best thing is that it does not have any side effect on the body and is completely natural as well as it works better than medicine.


So…Lets make use of this nutritionally rich fruit and for that lets have Date with Dates…

Khajur Kheer :
 
Ingredients:

200 gms- Khajur
50-100 gms- Jaggry
1/ lts- Milk
1 tbsp - Dry fruit pieces
1 tsp- Elaichi pd
1 tsp- Ghee. 

Method :

Soak Khajur in little amount of water for ½ an hour
Now add jaggry powder and grind the mixture.
In a copper bottomed vessel add ghee and this mixture.
Cook till the mixture boils.
Bring it down from fire and add dry fruit powder and Elaichi powder.
Now add milk and mix well.
Serve hot or cold..

Carrot Burfi.




It is believed that the carrot was first cultivated in the area now known as Afghanistan thousands of years ago as a small forked purple or yellow root with a woody and bitter flavor, resembling nothing of the carrot we know today.

Carrots are an excellent source of vitamin A, providing 210% of the average adult's needs for the day. They also provide 6% of vitamin C needs, 2% of calcium needs and 2% of iron needs per serving.
 It is the antioxidant beta-carotene that gives carrots their bright orange color. Beta-carotene is absorbed in the intestine and converted into vitamin A during digestion.
Carrots also contain fiber, vitamin K, potassium, folate, manganese, phosphorous, magnesium, vitamin E and zinc.
An overwhelming body of evidence exists suggesting that increased intake of antioxidant-rich fruits and vegetables reduce cancer and cardiovascular disease risks, carrots included.
The antioxidants and phytochemicals in carrots may also help with blood sugar regulation, delay the effects of aging, and improve immune function.

Let’s make some delicious Sweet dish- 
Carrot Burfi.

Ingredients :
1 kg-  carrots, 1 ½ kg Sugar, ¼ kg- ghee, 1- ½ katori coconut gratings, 1 tsp- Elaichi pd. Powdered Dry fruits .
 
 





Method : 

1.Wash & peel out carrots & grate them.
2. Add 1 tbsp ghee in a karayi n add carrot gratings
3. Now add coconut gratings.
4. Add Sugar n mix well.
5. Keep stirring so that to avoid burning at the bottom.
6. Now add 1 more tbsp ghee n mix well.
7. Add elaichi pd & dry fruits pd.
8. Grease the thali with ghee & keep it ready for pouring the ready burfi mixture.
9. When the mixture comes out without sticking the karayi, pour it on the thali.
10. Flatten it with rolling pin & cut in to Diamond shape pieces.
Your  delicious & healthy Carrot Burfi is ready..
