Ragi Masale Mudde






Hello friends.
Ragi is known as 'super cereal'.
 Ragi iscommon name of Finger Millet in Southern part of India. Along with oats this is one of the most nutritious food and one of the easy to digest. It is rich in calcium and protein and also has good amount of iron and other minerals. It is extremely good for people of all ages. It is low in fat most of which are unsaturated fats. Ragi is a very good to be included as a part of staple diet as it lot of essential nutrients, amino acids and minerals
This grain’s protein content is comparable to that of rice. However, some ragi varieties have shown double that level. More importantly, this protein content is quite unique. The main protein fraction is eleusine, which has a high biological value, meaning that it is easily incorporated into the body. 

Ragi helps to controls diabetes and cholesterol.

Prevents cardiovascular disease.

It has anti- cancer potential, and it helps to keep you YOUNG.

Friends, You might have tasted Ragi Mudde, Ragi Dose & Ragi Malt. Today
Let me tell you how to make ‘Masale Ragi mudde’. It is very easy & tasty too. 

Ragi mudde, is a staple in some parts of Karnataka and Andhra Pradesh and is usually served with a soupy curry like  tomato rasam, bassaru or sambar which pairs up well with this mudde. 
Today I’m making Ragi Masala Mudde to give some spicy touch.


Ragi Masale Mudde 

Ingredients ---
Ragi Floor- 1 cup
Chopped onions – 1/4 cup
Cumin seeds- ½ tsp
Oil / Ghee - 1 tsp
Chopped Curry and coriander leaves
Salt to taste
Water- 2 Cups

Method-
Heat karai, add oil or ghee and put cumin seeds.

 Add chopped onion n roast well.

 Add salt, curry and coriander leaves n stir well.







Apply oil to rolling pan and use it for stirring.


When the water starts boiling rapidly bring the karai down and add floor carefully. Mix well.
  



Keep again karai on flame and stir well so as to avoid lumps.  

Cook it till it thickens. Scrape off the sides 

and cover it for few minutes.



Now make balls with the help of big spoon or grease or moisten your palms and make balls.






Serve hot with your favorite sambar or curry.

     I’m serving it with radish sambar.

Dehydrated Onions


Lovely Onions. Zindabad.Zindabad....
Sunday thought of relaxing... but when I bought these healthy ONIONS i couldn't resist myself. My project to sundry these diced onions created havoc in the house. Indeed..It is the best way to clean ur eyes..haha.. 
Health benefits- 
Onions have antibiotic, antiseptic, antimicrobial and carminative properties to help you stay away from infections.
Onions are rich in sulphur, fibers, potassium, calcium, vitamin B, vitamin C and they are low in fat, cholesterol and sodium.
It is an immediate cure for fever, common cold, cough, sore throat, allergies, etc. A mixture of onion juice and honey can cure these problems easily.
A small piece of onion can work against side effects of fever if it is kept on the forehead.
A small piece of onion, when inhaled, can stop or slow down the bleeding through the nose.
An onion a day can cure insomnia or sleeping disorders. This will surely give you a good night’s sleep.
Onions can improve the digestive system. If you have a digestion problem, then onions can cure it by increasing the release of the digestion juices.
Onion juice can cure burnt skin or an insect bite or a bee bite. It may burn more but it can heal it very effectively.
Onions can be used to prevent cancers. It works against head, neck and colon cancers.

Dehydration of ONIONS-The most commonly adopted drying practices for onion is sun drying or solar drying, convective air drying, greenhouse drying and infrared drying.  These techniques are mainly used for preservation and value addition of onion.The best part is these are free of preservatives. 









I’m  using  natural method - Sun drying or Solar drying



In this process free water is removed from these ONIONS during the drying process so that microorganisms do not survive and reproduce. Simultaneously, the solids such as sugar and organic acids are concentrated thereby exerting osmotic pressure to further inhibit the microorganisms.
Any natural plant food will have bacteria on it, unless it has been processed by heat or irradiation. The bacteria will be derived from the field in which the vegetable was grown and may pick up bacteria during handling from your store or home. If you leave any vegetable at room temperature it will eventually decay due to the combined process of bacteria growth and breakdown of the cell walls. This may seem like the vegetable is ‘attracting’ bacteria but more likely the bacteria are just multiplying as the vegetable is breaking down. The rate of decay will depend on the level of bacteria present, the type of bacteria, temperature, oxygen and light, as well as the structure of the vegetable. 

*Dehydrated ONIONS :- These are free of preservatives. Use these flakes for any spicy dishes like curries and Pulao for special aroma. 
Store them in flakes form or powdered form in a tight container.

Masala Bhindi





Happy evening friends.
Summer time.So we can make varieties of dishes based on summer vegetables. 
One f my kids favorite dish is Masala . Before I start making this dish lets see what all the health benifits this beautiful Lady's finger has. 
Bhendi / Lady's finger has many health benefits-
Excellent laxative.
Treats Bowels.
Heals Ulcers.
Soothes the gastrointestinal tract.Lady’s Finger can be applied to hair as the last rinse to make your hair bounce.







Masala Bhindi
RECIPE..
1/2 kg bhindi

.
Cut Bhendi /okra longitudinally , fry in lil oil, keep aside.
Slice Potatoz..(photos)..:p.. n deep fry n keep aside.
Now main masalaa..
1- ONION, 2-3 Tomotos, few pods of garlic, 1 1/2 ' ginger, garam masala- 1 tsp, Kitchen king - 1 tsp, chat masala - 1/2 tsp, coriander leaves, r. chilli pd & salt acc 2 ur taste.
Method-
Grind onion, garlic, adrak / ginger . Put vagar wid lil oil n Ghee.. add this mixture n cook till golden brown.
Now grind tomatoes n add 2 the masala mixture. Cook well.
Now add fried pieces of bhendi & potatos.
Mix well..U'll get a wonderful AROMA.......
Now add G.masala & Kitchen king.

At d end sprinkle chat masala & garnish with coriander leaves.
