OMG… No vegetables… n have to pack lunch for kids.
Don’t panic… Check your fridge, you’ll find good amount of milk. So chill & make Paneer or cottage cheese. This will help u to make quick and easy Rolls or for dinner dish when teamed with hot Chapatis or Parathas.
Homemade Paneer is a high protein food. It is often substituted for meat in many vegetarian entrees of Indian cuisine.
So lets make healthy & tasty Paneer Bhurjee Rolls..........
Ingredients:
- 2
liters Full cream milk / 500 fresh
paneer (mashed into a crumbly texture) - see below for recipe
- 1
medium onion chopped fine
- 1
small tomato chopped fine
- 1
green chilli chopped fine
- 1/4
tsp turmeric
- 2
tsp- Chat masala.
- 1/4
tsp coriander powder
- 1/4
tsp cumin seeds
- 2
any cooking oil
- Cheese
spread
- Chopped
fresh coriander to garnish
- ½
cup Butter milk
- ¼
cup Tomato sauce
- Salt to taste
To make Paneer-
. Bring 2 liters of fresh whole milk
to boil.
. ½ cup of buttermilk (can add 2
table spoons of vinegar or lemon juice curd) and stir well. Put aside.
. After the milk has curdled, wrap
it in a clean muslin cloth, rinse with fresh water and drain well.
. Form a ball and place it under a
heavy saucepan for approx. 20 minutes.
. Now your paneer is ready.

- Heat oil in a pan on a medium flame, till hot. Add cumin seeds and fry till spluttering stops.
- Add chopped onion and fry till soft. Now add green chilies and tomatoes and fry till the tomatoes are pulpy.
- Add all the powdered spices and mix well. Fry for 2 minutes.
- Add mashed Paneer.
- Mix well and cook for 2 more minutes. If the paneer gives off water at this stage, cook till the water has dried up. Turn off fire.
- Add tomato sauce n mix well.
- Apply cheese spread on chapattis / parathas.
- Put paneer bhurjee & season with Chat masala salt.
- Garnish with the chopped fresh coriander.
- Wrap the rolls n Pack it.
- Paneer Bhurjee also makes a great topping for fresh, hot toast!
